Shorten steel braided throttle cable?
Shouldn't be too much of an issue. I've fitted universal cables, although they're not stainless braided. The only difficulty may be cutting the housing (that's the outer). The basic procedure is to remove the inner and fit the housing to the bike. Once you're 100% happy with the routing, cut it to length. You can guy cable cutters, but for a one-off I'd use a hacksaw or dremel if you have one. It's best to make sure the end is square, so a file is useful too. What is the carb end like? nipple or clamp <fnarr>. If it's a clamp then you connect the inner to the twistgrip and feed it through. At the other end, clamp it and cut off the excess. If it's a nipple they you'll need to find one the correct shape and size and solder it to the inner. It's best to feed the inner through as above, then figure out where the nipple needs to be and cut the inner. Then remove the cable and solder the nipple to it. You don't necessarily have to remove it from the twistgrip for this. Yep, I had one and those bars are terrible. Like holding a wheelbarrow. I swapped mine for Triumph Bonneville export bars, much better but that wouldn't give the look you want. Good luck with it!

XS400 DOHC clutch switch
It is a front brakelight switch, and I tried asking the vendor but got no reply. I want to know if it's physically the same as the clutch one. I suspect they have different part numbers as the wires will be different colours, so a parts list probably won't help. I suppose I could just buy it and see.

Number plate size
First time I took mine for an MOT it didn't have a reflector so the tester stuck two 10p sized ones on the number plate and passed it.

'81 xs400 gets hot and dies....
Stumbling and dying sounds more like fuel than electrics. Doing it when hot suggests running too rich, but I think you know that. Is the choke sticking on? How easily does it start from cold? Choke required? And finally, how's the fuel tank vent? If that's blocked it will die after a short while. Next time it dies, open the tank and listen for the inrush of air.
