top end decrease
Have you tried buying a brand new spark plug? Sometimes they get a bit dodgy after some use. Check your HT cap is in good working order too. Have you had the carb out for a clean at all? Maybe there's some kind of blockage in there. Decokes are quite beneficial, especially if you ride around at low speeds frequently. Wont necessarily be if, but when.

Exhaust pipes
You can drill them out and give the bike more sound but I don't think your exhausts will last very long afterwards. Better off getting a proper system.

XT125 help
What exactly did you remove? Sounds like it lost a lot of power from removing whatever it was. Have you tried sticking on some kind of an aftermarket exhaust? That might help to even it out again.

Newbie Hi and Buying Advice Question
It's their word against his, of course they will all say that they set them up better than others but it's not necessarily true. For $500 you're better off going a few towns over and getting that one as long as you can see that it's not been bodged or damaged. As long as you get some kind of warranty then there's no real need to worry. On the other hand, buying from a local business can often work out equally well as they can bend the rules a little bit and throw in some extras or you may even get discounts on parts later on. Myself I'd buy from a dealership as they are a larger establishment and you can take legal action easier if things go tits up but it's up to you.

Running like a bag of spanners
Could well be carb icing. I had a similar problem with my YZF a little while ago. It would run fine but after a run down the motorway she'd cough and splutter if I whacked the throttle open from a closed position. Cleaned the air filter and ran a strong mix of Redex and I've not had a problem since. If it's been serviced then it's unlikely that the air filter is to blame so run a fuel booster like Redex or Nitrox Street Legal and see if it improves.

I'm not 100% sure that it is a 125 main jet so you'll need to whip out the carb and confirm that. Going up 2-3 jet sizes should be sufficient (e.g 135 or 140). Just check with the shop what increments the jet sizes go up in and I'll be able to point you in the right direction. With my DTR they went up in tens so the next size up from my standard 240 would have been a 250. Sometimes they go up in fives so just check with them.

I've met a lot of coppers. Only a few of them are considered by me to be 'good' mainly because the majority of them were gorgeous girls in their early 20s. There was one male copper who I considered to be alright because although he came across as a typical copper on a power trip, he turned out to be a pretty decent guy. It started out with a few of us out on a ride and we stopped at an industrial estate for a bit. A friend crawls under the gate and opens it to get the bikes in. Pig car pulled up and my friend is still inside. After my friend's made their excuses the cop started running off registration checks. He told one of my friend's that he lives near to him so my friend says "Well, I'd better be careful then hadn't I?" to which the reply wasn't "Yeah you'd better", it was "Nah that's ok, when I'm off duty I do the same thing".

first off
Before I start pushing harder, I always get the figure of £1000 in my head so I know if I drop it I will be skint. That usually slows me down. I've not bothered with the crash bobbins because I've seen one with them and it was still scratched all over so I figured just ride slower and more carefully.

If memory serves, the main jet size is 125. Fit a full DEP system but I don't recommend fitting aftermarket air filters as you'll melt the piston. Instead, remove your seat and you'll find a rubber tube going into the top of the airbox. Pull that off and it'll allow a perfect amount of air flow and then you just need to rejet the carb and away you go.

I found it really difficult to get an ignition barrel for my bike after it was stolen by some chavs. All the ones I got sold had the wrong connector block on the end of them. Ended up kind of bodging one on but it didn't do much except kill all the electrical functions (engine remained running).

top end decrease
It is something that can be done yourself but if you're not sure about it then I'd leave it to a mechanic to do. Easily goes wrong as I found out. They'll be able to check the condition of the bore and tell you whether it needs to be rebored or not. Hopefully it will be alright and you will just get away with a piston kit and a decoke. Decoke it properly though or it will just clog up again. You need to clean all the deposits from inside the cylinder head and finish it with metal polish so that it has a shiny surface (allows better gas flow for improved performance and also slows down the coking up). Remove powervalve and the same applies. Scrub it clean and polish it. Running in process takes about 300 miles. After you've covered the first 200 miles you can take it past the midrange and into the powerband just for a quick squirt to clear any buildup, not higher than 7k though and don't keep it there (You literally need 1-2 seconds).

Help, Engine Won't Start
I'd begin by giving the carbs a good clean and replace the fuel filter. Clean the plugs up and make sure they're working properly. If it still doesn't start then give the fuel system some attention as the fuel pump could be gunked up from stale fuel.

Check and clean all relevant electrical connections and make sure connector blocks are fitting together properly.

When was it last rebuilt? Being that you take it to 80mph it's getting pretty abused so it might be time for a new piston and possibly a rebore. Don't forget to decoke it too.

You can make slight power increases by increasing the engine's air supply. Remove the airbox and fit a cone style air filter direct to the carb and replace the silencer with a straight through pipe and it should be marginally more powerful. Probably get away with adding a tooth or two on the front or dropping 2-3 off the rear.

Yeah 90/90-21 is correct on the front. AM44 4.10-18 on the rear. This is mine with Distanzias.
