My bike has bare metal pegs both rider and pillion, so my question would be how that works?? I'm aware that if the rubbers are perished on rubber mounted pegs its an mot failure didn't know about the rest though.

Personally, I've had metal studded pegs on my bikes for years and never had a problem.
