I tried removing the rear footpegs on my XT but couldn't. By the looks of it I will have to chop the off with a stihl saw or grinder. I don't like them, they get in the way and look shit. Any suggestions on what to do, or how to go about it?

Yes leave em on unless you intend to fit a single seat, It will FAIL the MOT with a dual seat and no rear footpegs

Thats right, my son took his rear pegs off his dt125r and he failed the MOT, had to take bike back next day with rear pegs on to get certificate.

I only have a provisional and CBT so I'm unable to entertain a pillion passenger, so they are pointless. Even if I was legally able to carry a passenger I wouldn't. I better leave them alone then, thanks for the advice.
