does sound loud, could be wear in the adjusters causing wrong readings.
The adjuster ends hammers the top of the valve stem and it dishes, causing you to measure the crown of the depression but not the actual gap

btw you can undo the carb connection and turn the union to the horizontal position
sounds like a carb issue.
pulling the clutch in then the engine revving could be either a sticking throttle cable or you have a weak mix. does the bike rev in neutral?
