I purchased a pair of Mikuni VM34 carbs for my 1975 XS500B. The new carbs do not fit into the stock intake gaskets. Would something like this work My link or do I need to do something custom?

As long as the chart they show fits the intake bolt holes on your bike, it should work. It looks like a well made piece.
